Colombia
is famous for its consistently fine, mild
coffees.Sometimes known as the "Breakfast
Coffee" of choice in the typical
American coffee drinker's morning diet,
our Supremo fits the bill nicely. Most
Colombians are not estate coffees, but
rather they come from co-ops where many
local farmers with relatively small farms
pool their coffees together under different
names. For many years the Colombian way
of grading coffee quality was through
bean size, with the largest beans classified
as "Supremo", then "Excelso".
The idea being that the larger beans have
had more time on the tree to develop desirable
flavor compounds. This is true to an extent,
however it's possible to have large beans
that come from inferior trees, thus the
only way to really quantify the quality
is through good old fashion cupping at
the cupping table. All our coffees are
cupped by us before and after we purchase
them.
We strive to keep our Colombian Excelso
as consistant as possible. It is a solid,
medium-bodied coffee with a bright, rich
in flavor but not overpowering.
